"... a curiously undersung regional delicacy: the cold-cheese slice, whereupon a giant fistful of uncooked mozzarella is added to a plain slice..."
"... just as it emerges hot from the oven. Local legend has it that Little Vincent’s developed this innovation as a way to help overeager patrons, unwilling or unable to wait for their pizza’s heat to dissipate, avoid burning their mouths; whatever its true origins, it is perplexing that nobody else has thought to copy the idea.... A cold-cheese slice offers the thermal and textural contrasts that define the best kind of street eating...."

But you have to travel to try them.
There's a little bakery by the Basílica do Santíssimo Sacramento (Church of the Blessed Sacrament) in Sao Paulo that makes a Mille-feuille that I swear actually has a thousand layers. Everyone claims theirs has a thousand layers, but only this place even comes close...I know what I'm talking about we've dissected one and counted them. It's amazing, and of course it's the best-kept secret that everyone knows about so of course they're busy and sold out every single time I'm there.
Just like BBQ, they only make so much a day, so the line starts early in the morning and you'd better be in it or you're not getting your full mouth orgasm that day. Brazilians are notoriously late for everything, the opposite of punctual, but they are very much on time to make it before they run out for the day. Anything that can make a Brazilian show up on time is instantly world class, it's how you know.
I used to live near Little Vincent's, which is in Huntington, on Long Island (NOT "in" Long Island). Little Vincent's stayed open late, and the fistful of cold Mozzarella on a plain slice was popular with the drunk 20-somethings staggering out of the town's bars after 2am. People really didn't order it before 9pm. I tried it once, sober, and it was disgusting. The Pizza itself was good, though.
And don't get a Long Islander started on LI's best pizza. It's a highly competitive market with hundreds of very good options. I'll go with Umberto's of New Hyde Park.
There are regional dishes worldwide that appeal to the high, the inebriated, the self-prescribed/drugged, the late night denizens of bars and parties and raves who have been told they don't have to go home, but they can's stay here. None of these foods makes much sense at noon, sober, no matter how hungry. Anyone for a CMOT Dibbler Sausage Onna Bun?
Having left Huntington two years ago, I can confirm bagdadbob is correct. The very walkable village offers a score of public houses and a concert hall. The cold cheese slice is big with the under 25 crowd on a pub crawl.
A counter at the window allows for gawking at other Bacchanalians passing by. Four formica tables squeezed together under fluorescent lighting, surrounded by sheet metal wainscoting are another option for those seeking the full 2 AM experience.
Rosa's a block down has a great veggie slice.
