We eat a lot of salads this time of year with slices of cold grilled meat on top. "Vinaigrettes" of olive oil and lemon juice (3-1) shaken up with salt, pepper, and dried herbs are the best dressings.
In the summertime, I crave light foods. I was on a cucumber salad kick in June. Thanks for pointing this out!
Sadly, some restaurants lack anything when you just want something light. Last night, the waiter at a kind of southern food/home cooking restaurant suggested Ice Cream as a light food! Not quite what I meant.
Alternating slices of tomato and "fresh" mozzarella layered on a plate (overlapping like shingles)drizzled with olive oil, chopped fresh basil and fleur de sel. Strew some various kinds black olives on the plate. Tasty and pretty.
Serve with fresh french bread and cubed melons (cantaloupe or honeydew) or other fruit. Add some slices of prosciutto if you like.
Ha ha ha. I bet I could win friends with this salad.
This year I planted a few zucchini plants in large pots on my balcony because I thought their elephantine leaves are cool. It was an experiment. I told myself to plant only one per pot because I've seen them dominate gardens ridiculously. All the seeds germinated and I couldn't bring myself to destroy the extras so I planted half of them and gave away the rest. Now my balcony is pretty much dominated by zucchini plants in three pots and I have baby zucchinis just how I like 'em. It's been a lot more fun than I imagined.
In the heat of the summer nothing tastes like a good old fashioned Southern watermelon salad.
Watermelon,Vidalia onion red wine vinegar, Salt and pepper extra-virgin olive oil, chopped fresh mint, crumbled feta cheese and whole mint sprigs. Don't forget the gin and tonic.

I'd rather eat the prime rib in my oven now. Keep the weeds, particularly the raw weeds.

A good fresh salad for a few days can also act as an antedote to overdosing on 12-Bones Barbecue. And again, too much of a good thing is wonderful!

I love salade nicoise.* But without the tuna and anchovies it wouldn't amount to much. Veggies can only go so far...even with olive oil.
