That sounds like it would make several good cheese balls. But it will need to be eaten with 20 year old crackers to get the flavors right. Let's hope it gets eaten before it goes moldy in the back of the fridge

I've had the 12-yo and I think the 15-yo cheddar. It's a good splurge. I'm gonna pass on the 20.

Wisconsin Cheese really is superior to all others.

Why won't anyone describe what the 20 year old cheese tastes like? Do you need the skill of a Hemingway to write an accurate description?

We buy the 15-year-old cheddar from these people. I have a problem tasting anything because of anosmia, so things like texture are very important to me. There's a crumbly texture with little crystals in the 15-year-old cheddar.

you'll get that crumbly texture with little crystals if you freeze your cheese.

And California is the #1 cheese producer in the country. Lots of great cheeses. Still, what this nation needs is a good Buffalo Mozzarella.

If we all ate more cheese it would bind us all.
