ADDED: I did some research into the idiom "ate their lunch," because I was just talking about last weekend's SNL skit showing Trump getting bullied by the popular kids in a school lunchroom. I said it makes me sympathetic to Trump to see the smug "cool" kids doing whatever they could to humiliate him, so it was interesting to me to hear Nancy Pelosi triumphing in a way that I thought evoked schoolyard bullies who steal lunch from their victims. But is that the source of the phrase "ate their lunch"?
Researching, I see that "ate their lunch" is a popular idiom in business. Investopedia says:
Eating someone's lunch refers to the act of an aggressive competition that results in one company taking portions of another company's market share.... This can be achieved through the release of a better or newer product, aggressive pricing or marketing strategies or other competitive advantages...That doesn't explain the origin of the metaphor. What are we talking about? Next, I notice the very similar phrase: ate him for lunch. Are these 2 phrases of the same lineage? If so, which is the corruption?

Totally the wrong subject! That's not about the old-time bullying where the kid's lunch is stolen, it's about kids making fun of what other kids are eating or criticizing it as "toxic" or whatever.

So reading through the article I'm not exactly sure what grand concessions Nancy Pelosi won? I'm also not sure whose lunch she ate. I'm leaning towards Mexico's. Trump and the Republicans have been waiting for the house to sign off on the trade deal for a long time. In fact it has been a point of attack for them. And suddenly Nancy Pelosi who is coming late to the table finally agrees to the deal, (probably because impeachment is hurting dems and they need to look they accomplished something.) and Nancy Pelosi is the one getting the credit in the article? Not even a perfectly barbecued brisket has this much smoke blown up their ass.

In my experience, in competitive business dealings, the phrase "eat their lunch" is always a boast predicting a future outcome where we defeat the competition - either taking away a relationship they already own or establishing one that they want. Sort of the equivalent of a pre-game speech.
As for Pelosi's declaration: just the politics of claiming victory, whether there was one or not.

Yeah that is my sense as well. I think she is framing the deal in this way to prevent anger in her base. Most of the Dems base doesn't want any sort of deals with Trump, the great Satan. So in order to assuage negative feelings she needs to frame the dems signing off on this deal and huge victory for the dems, not just a good deal, but one where 'we ate their lunch.' I kind of view Nancy Pelosi as trying to navigate between Scylla and Charybdis. If she indulges her base too much and goes full anti-Trump resistance all the way, the dems will get their clock cleaned in upcoming elections, but if she works with Trump too much and doesn't go on the attack against him, there could be a revolt in the party and she would lose her speakership and maybe even the Democrat party could split.

Learned this morning on FOX, Rick Perry interview, about Pelosi negotiating away US pharmaceutical companies patent protections. Patent law not something I have spent any time thinking about, Perry's take is that aspect of the treaty, will ultimately, raise the cost of drugs. I guess because the years of protected market for the drug will be shortened and generics will come in, limiting the amount of time, R&D costs can be amortized.

There's also the phrase, "having your lunch handed to you." That seems to have the same sense as "someone eating your lunch" of being outperformed, but with the person who outperformed you being gracious enough to hand you the lunch you had hoped to earn yourself, rather than eating it.
Might these two phrases be from the same origin? I will offer that they share their origin with the phrase "pork barrel":
