I am unfamiliar with the law in this area. How does this jibe with investigative journalism for example? Can a journalist go somewhere with a hidden camera and record a conversation he had?

In Kentucky, if the journalist, or anyone, is a party (participant - although you don't have to actually utter words) in the conversation, he/she/it can record the conversation. This is allowed by federal law, and state law in KY. Some states require all parties be aware of the recording.
Its the 1% doctrine.
If there's a 1% chance that something like a surreptitious recording will help democrats defeat a republican, democrats will take that chance, roll with it and deal with the consequences later.
Remember, the mentally ill can't have access to firearms but if they're Democrats, they certainly can be US Senators...

The story immediately went viral in political circles, not so much for the videos’ content as for McConnell’s pushback. The Republican senator quickly went on offense, decrying the left’s “Nixonian-style” tactics, and turning the non-story of the videos into a headache for local Democrats. Progress Kentucky is a registered 501(c)(4) organization which is forbidden to conduct illegal activities such as recording conversations without permission of the participants. The organization founders as the recorders are also individually culpable - so their operations should be shut, the founders should be prosecuted and the organization's funds should be confiscated.
It seems that we are merely scratching the surface here since there is a massive conspiracy afoot among some 36 liberal advocacy groups now called the Democracy Initiative. Interestingly, 501(c)(3) organizations participating include Mother Jones and CREW . . . and it took Mother Jones to blow the whistle on this grand conspiracy.

Actually I found his speech quite uplifting last night when Judi and I attended the a benefit at Detroit's Tabernacle Missionary Baptist Church. So did the 2000 others in the church. He and his wife also remained for a reception afterwards. He's a very easy man to like.
