The BBQ debate. It's as stale as political debates. Everyone loves their pols, bbq, pizza, etc. that they grew up on. When people travel and eat other cuisines w/ an open mind they see that it's all good...just different. Who says travel is overrated? Only the myopic, or the phobic.

Barbecue, done properly, is a religion that can easily embrace both beef and pork varieties. The Goddesses of Barbecue are remarkably ecumenical and inclusive, tolerant of odd ingredients and competing flavors.
Barbecue is like sex. It can be bad, but there are many, many, many ways for it to be good, sometimes sublime.
So enjoy your pork in TN and your beef in TX, or vice versa -- guilt-free.

Unfortunately, I am now in Wisconsin where there is no BBQ of worth to be found. We do, however, have cheese curds and brats, but all things considered, I'd rather be back in Texas.

Interesting - in that the Tejas BBQ cuisine was established by German immigrants. Same as the Wisconsin bratwurst thing. Perhaps the immigrants made the best of what was available?

When I was in the U.S. Army stationed at Ft. Benning newcomers to post would often ask me where they could find good barbecue. My answer was always the same; go to Atlanta, get on Interstate 20, head west, keep driving until you see mesquite trees, you will be somewhere west Texas, pull over.

As much as I miss Texas and everything about it, I have to say that Memphis BBQ is better than Texas BBQ.

I went through Sweetwater yesterday. And I have eaten at Big Boy's; it is good bbq.
Story of my life.
Sweetwater is not far where there was a naughty rock on a ranch that was subsequently painted over.
oh man I miss Texas barbecue! It was always the same, and it was always good.

East Texas has pork barbecue, but it's beef by default everywhere west of the Big Muddy.
I love pork barbecue Lexington style, but I long for Texas brisket.
