Having a recently revealed sugar issue, bread and juice are off the table for me. Coffee, eggs and bacon/sausage rule the morning. A carb free/ sugar free diet remains a challenge. Now it's cholesterol. Doctor says I need to eat like rabbit. Easy for him to say.
As an electrician explained to me, left alone, knob and tube is very safe wiring. It's when people started to cobble it together with romex that created electrical time bombs. Maybe he was wrong. I pulled it all out from an earlier house built in 1855.
I have to agree with everyone who thinks that looks good (and there are other equally good looking choices). I believe I can eat a breakfast like that maybe once every 3 months, at least in the summer when I walk between 20 and 30 miles a week on moderately challenging trails.
That pic is making me shake with Bacon Withdrawal Syndrome.
Congrats and best luck on rewiring the house. I remember trying to do some of that in our first abode, an 1820’s farmhouse. Lots of fishing of wires and replastering. I can send you an auger bit and an extender if you run into trouble.

Think "I'm hungry enough for most anything right now", and you know, rabbit food just might taste good.
Think "fried in a bit of olive oil" and it starts to sound a little better.
Think "a bit of tuna or sardines for protein" and it will hold you for hours. Or maybe even a single egg.
Think "just a bit of mayonnaise might go a long ways here", and you're nearing something which for you just might taste just as good and be as nutritious as a bacon 'n egg grilled sandwich.
I don’t think it was unsafe but we may want to sell the house at some point on short notice and it would slow things down, so we want to get it done.
Since you loathe finance an unsolicited bit of advice: As someone who waited until after the riots to sell, if you’re selling because of the riots, don’t wait until the riots to sell…
Every time I try to think of what could be a better place... I get confused. I need to see the house and I need to see the architecture of the entire town and I need to think of the surrounding landscape — the walkable neighborhood, the downtown, the nearby natural areas, the place as the center of a hub for longer trips, and then the health care and all health and safety issues. And where's the sunrise run?
But if we ever find this place, we have a house to sell.
What could be better for us is a smaller place, maybe one-story so it will work as we grow older.
My wife and I have a small 1 and 1/2 story Cape Cod House on a gravel road in Eastern Iowa, with 5 acres of land, built in 1940. Who builds a house right before WW2? But it is very well built house with authentic 2 by 6 wood beams. It's just us and our one dog and one cat. I can understand where you are coming from. We are a 15 minute drive from Iowa City, a college town like Madison, so we have the best of living in the country and yet a short drive to a thriving college town with all of its culture, collegiate sports, education, bars and restaurants. I sincerely hope that you find what you are looking for. We did.
My partner and I are house hunting right now in Eugene, Oregon. I am 61 and we also want to be prepared for my elderly father to live with us if necessary. Half the women I know in my age group have had some kind of knee problem that made stairs a hassle for weeks. Want to avoid buying a house only to find I can't access half of it.
Oh boy, look at listings with an eye to accessibility for up to 5 people (visiting family as well) - suddenly its stairs, stairs, stairs everywhere. Cuts out a huge number of houses - like 70% of them. A decent one-level house of sufficient size is tough to find.
Ann - did you have your house tested for asbestos before all that wall cutting started?
"I am supervising the removal of the knob and tube."
I think that the knob and tube is a pub I went to in Harwell when I was doing a summer internship in the UK as a nuclear engineering student. I was discouraged and switched majors.

Egg sandwiches are god-tier. Anyone who thinks otherwise is a communist. Fight me.
Good, but it's been done so I'll give it an iconic...
shouldn't there be sausages? WHAT is The Point of bacon if there's not going to be sausages too?
I'll have what he's having.
Sugar in the coffee?

All good but the OJ.
For a Wisconsin breakfast, I expect copious blobs of molten cheese oozing out from the interior.
Looks yummy.

I will fight you for your egg sandwich...
Who in your household is responsible for wrapping and taping the silverware each day?
Mmm… so good. Ready to hit the trails. That’ll be me slipping in late tonight so hold your fire. Please.
why solo? and not duo!
why table? and not bed!
"why solo? and not duo!"

If that sounds sexy, you do not live in a 100-year-old house.
Bacon .. mmm mmm good.
I had a BLT for breakfast this morning. Tomato and lettuce picked fresh from my garden.
Yum-may
Looks like a nice omelet with some ground up wheat polluting it.

I have replaced knob and tube in several houses.
Old houses tend to have small crawl spaces and poor attic coverage. You meet a lot of spiders when you re-wire a house.

The fork looks comfy...
I associate this combination of foods with the road to dementia. I am sorry. Coffee 👍

The electrical process in involves numerous hole in walls and ceilings in 10 rooms. It takes 2 weeks of hard work by 2 men. It’s quite something.

What are the algorithms to make of a knob and tube mead-house upgrade?
Bacon! I lost my taste of steaks, maybe because of covid, but the thought of bacon! still makes my mouth water.
No brandy old-fashioned?
I guess when one is married and retired, "Make me a sammich" is the first think she hears in the morning.

Works in Idaho as well.

Hmm...
A move in the future. At some point.
rocky mountains?
Is that French Toast?
Every Saturday morning - after a nasty hike - wife and I go to the same dive. They see our truck parking and start cooking what looks a lot like that.
Alas, too many carbs for me.
"rocky mountains?"

One story, laundry on the main floor is the Only Way!

Sounds like toxic masculinity is sometimes good...
Bacon and egg sandwich.mmmmmm.
The process of preparing is pat of the joy.
