I followed the link. This is actually a pretty excellent way to do the bird we haven't tried yet.

We have done flavor injected, whole-fried turkey.
Unfried but injected Turkey.

Had turkey, Wild duck & venison slow-baked and lightly smoked by cooking on buried hot stones. Native American style - Along with potatos, winter squash, sugar pumpkin, turnip, onions, carrots also cooked on buried coals for a day. (At a friends, and super-good. Yes, purists - carrots, onions and turnips are not native,,,but neither is butter, pepper, garlic, or, most importantly - most of us! )

Brined turkey.
Done a hot turkey curry served like a stew with bok choy, other veggies, peanuts, and coconut milk for Thanksgiving.
Stir-fried turkey served to order.
We have had turducken.
Turkey done Mexican style.
Turkey done Russian style.

But not "spatchcocked" turkey. Add that to our list of "to dos".

Someone mentioned Titus. Hope he comments. He is an epicure who has done some good comments on other meals, but not a Really Gay Thanksgiving.
But hope he limits himself to desribing prepping and eating what goes INTO him...and avoids his coprophiliac urges to give testimony to what comes out of him.

Sorry about the multiple posts, it kept prompting me to reenter the word verification and I thought I did it right the first and second time.

As for Thanksgivings, gay or straight, they go better with lots of straight bourbon. Preferably Wild Turkey to keep it in theme.

I suppose if you got a big old paella pan and a couple of cinder blocks you could do Turkey Under a Brick, for a change of pace.

It actually looks like it is resting peacefully and sensuous in the picture laying on the pan (just before roasting). With its legs slightly crossed.

Is spatchcocking really that new an idea (or word)? I've been doing that to poultry for over 40 years. Whether it's game hens or turkeys, spatchcocking just cuts masses of time off the cooking. It's just about the only way you can cook a turkey on a grill, short of a rotisserie.

God, I hate being serious, but spatchcocking either a chicken or a turkey is a great way to cook them.
