The greatest vegetable.
A man who has sampled 1,000 vegetables has chosed the very best one.

I'm amused by how disturbed I was by the gleeful phrase, "I've got a knife!"
He just finished describing the plant as though it had intention and agency--it's trying as hard as it can to protect itself from being eaten--and then he laughs and says "your desire to live is no match for my hard steel! Die thistle! Die!"
And then he cuts all its limbs off and rips its guts out.
Huh, my money was on Broccoli.
Has he tried nettles?
Nettle Soup
1/2 large shopping bag of fresh nettle tops
Salt
1 tablespoon extra virgin olive oil
1 teaspoon butter
1/2 cup chopped shallots
1/2 cup chopped celery
1 pound Yukon Gold or russet potatoes, peeled and chopped
4 cups chicken stock, homemade or store-bought
1 to 2 cups water
1 bay leaf
1 teaspoon dried thyme (or a couple sprigs of fresh thyme)
Freshly ground black pepper
1 1/2 tablespoons lemon juice
2 to 3 tablespoons heavy whipping cream
Blanch the nettles. Sauté the shallots and celery. Add the potatoes, stock, bay leaf, and thyme. Chop the blanched nettles, add to the soup pot, and simmer 15 minutes. Purée the soup, or not. Season to taste and serve. Nettlesome, but delice.

But it's the favorite vegetable of a guy who wanted to eat 1000 vegetables.
I want to try one though.
Eat your heart out Euell Gibbons. I'll look for this at the Farmers Market. I doubt it shows up though. I usually see thistle along the roadside, and no thanks for that growing environment.
I like that he and at least one of the other people appear to have cut their lips, wonder how that might have happened...

Looks very like cardoon, the stem of which is also considered edible.

Wouldn't that imply one would eventually have to pass the pine cone? What a pain in the ass that would be.
