Vinegar's acidity works very well preserving colors leached out of substsnces soaking in it's water base.
Even better is alcohol. I have a 1-quart cordial-maker where cheap half gallon vodka can be transmuted into bright colored codials to give to friends. The sugar adds preserving power on top of the alcohol.
Great ones: Concord grapeskin cordial, raspberry, dandelion, a "chartreuse" made from herbs and wild gentian, kaffir lime leaf cordial, homemade absinthe from fennel seed & wormwood (artemsia), wild or cultivated rose cordial, peppermint&milkfat cordial (fat combines with peppermint oil and smooths it, gives a white-pinkish color), habenero/jalapeno cordial.
All the colors of the rainbow, and you can drink it, too!
